THIS is what I need to deal with today... these are the last of the tomatoes and peppers that I picked, just before frost on Wednesday. Hmmm...what to do? I think the majority of this stuff will get chopped and frozen. I will probably make some hot pepper jelly with the red, green and yellow hot peppers. Does anyone have great recipes for what to do with green tomatoes? i couldn't resist picking them...but I'm not sure what to do with them. chutney??

I made great chutney from green tomatoes last year, we had a glut and have only just finished the last jar! The recipe is - 2 1/2 lb green tomatoes, 2lb onions, 2 1/2 lb cooking appleas, 1lb seedless raisins, 6 cloves garlic crushed, 1/2 tblesp cayenne, 1/2 tblsp salt, 2 level dsstsp ground ginger, 1lb 6oz soft brown sugar, 1oz pickling spice, 3 pints malt vinegar. Wash tomatoes & quarter, peel onions & quarter, core & quarter apples. Using medium blade of a mincer or a food processor - mince tomatoes then onions, raisins and finally apples and put in small preserving pan. Add garlic, cayenne, salt, ginger & sugar and blend thoroughly. Tie pickling spice in small piece of double-thickness gauze and attach to handle of pan so it hangs into other ingredients. Pour in vinegar and bring to simmering point removing any scum. Simmer gently for 3 1/2 hours without covering. Stir occasionally. When the vinegar is almost absorbed it's done! Enjoy!

Man, that sounds SERIOUSly good! YUM! Green tomato chutney over brie. What do you like to do with your chutney?
