I got out my juicer and went to town. I threw in:tomatoes, a little garlic, a little onion, one jalapeño, a smidgen of beet, a bag of arugula, fresh basil, cucumbers, carrots, and some green peppers. I didn't measure anything, just kind of guessed and adjusted to taste. I put it all in a big pot and brought to a simmer... This really deepened the color, and made it taste and smell much richer. :) I seasoned lightly to taste with seasoned salt, pepper, smoked paprika, lemon juice and Worshestershire sauce. Pour into jars, label and freeze.
