The recipe is - 2 1/2 lb green tomatoes, 2lb onions, 2 1/2 lb cooking appleas, 1lb seedless raisins, 6 cloves garlic crushed, 1/2 tblesp cayenne, 1/2 tblsp salt, 2 level dsstsp ground ginger, 1lb 6oz soft brown sugar, 1oz pickling spice, 3 pints malt vinegar. Wash tomatoes & quarter, peel onions & quarter, core & quarter apples. Using medium blade of a mincer or a food processor - mince tomatoes then onions, raisins and finally apples and put in small preserving pan. Add garlic, cayenne, salt, ginger & sugar and blend thoroughly. Tie pickling spice in small piece of double-thickness gauze and attach to handle of pan so it hangs into other ingredients. Pour in vinegar and bring to simmering point removing any scum. Simmer gently for 3 1/2 hours without covering. Stir occasionally. When the vinegar is almost absorbed it's done!
